The popular drink here in the Yucatan and most of Mexico, Jamaica, pronounced, ha MIKE a , is a delicious refreshing drink. Its made from the Hibiscus Roselle plant and grown in nearly everyone’s back yard here in St Elena .

The flowers are harvested and dried in the sun for several days ,then steeped in hot water for a couple of hours to bring out the flavors.

It has great health properties as a diuretic and oft times as a laxative.


Recipe ½ cup of loosely packed dried red Jamaica flowers

4 cups of water

½ cup sugar

2 tablespoon of lime juice

Rinse the flowers and drain. Place in a pan with the 2 cups of water and bring to a boil. Remove from heat and let stand until cooked and flowers are no longer red.1 to 2 hours. strain liquid into a pitcher. Discard flowers and add remaining 2 cups of water. Stir in sugar until dissolved. Stir in lime juice and chill. Makes 4 servings.
